Small batch (makes 4.5 qts / 9 lbs) feeds 6-8
(2 lbs) 90% lean hamburger (browned in the ground cumin (below), do not drain)
(2 pkgs) chili seasoning (original/mild)
(1) medium white onion, chopped and browned
(1) large green pepper, chopped and browned
(1) 46 oz can tomato juice
(1) 14.5 oz can diced tomatoes with chili seasoning
(1) 14.5 oz can diced tomatoes with green chilies or jalapenos
(1) can chili hot beans, drained and rinsed
(1) can dark red kidney beans, drained and rinsed
(1) tbsp ground cumin
(1) tsp chili powder
Large batch (makes 10 qts / 20 lbs) feeds 12-16
(5 lbs) 90% lean hamburger (browned in the ground cumin and garlic (below), do not drain)
(6 pkgs) chili seasoning (4 original/mild, 2 hot)
(2) large white onions, chopped and browned
(3) large green peppers, chopped and browned
(2) 46 oz cans tomato juice
(1) 14.5 oz can diced tomatoes with jalapenos
(1) 14.5 oz cans diced tomatoes with chili seasoning
(1) 14.5 oz can diced tomatoes with green chilies
(2) cans chili hot beans, drained and rinsed
(2) cans dark red kidney beans, drained and rinsed
(1) can Cannellini kidney beans (white), drained and rinsed
(1) can seasoned black beans (frijoles negros), drained and rinsed
(2) tbsp minced garlic
(3) tbsp ground cumin
(1) tbsp chili powder
